Recipe For Breakfast Quiche

1 cup low-fat Swiss cheese, shredded
1 cup low-fat cheddar cheese, shredded
1 heaping tablespoon low-fat plain yogurt
 2 large whole eggs, beaten
1/2 cup tomatoes, chopped
1/2 cup zucchini, diced
 1/4 cup onions
1/2 cup mushrooms, sliced




Mix all ingredients together.  Season to taste.  Spray bottom and sides of glass baking dish with non-stick spray.  Bake at 350˚. F for approximately 30 minutes or until golden brown.




*Option - other vegetables:  chopped olives, zucchini, pea pods, cauliflower florets, broccoli florets


NOTES : Serving For 4 Persons
